The Netherlands is once again gearing up for the big Sinterklaas celebrations this year, kicking off on Saturday, November 18th, when Sinterklaas and his helpers arrive in the fortified town of Gorinchem by steamboat. Well before his arrival, supermarkets and bakeries are already stocked with a wide variety of kruidnoten (ginger nuts), letters, and pepernoten (ginger nuts). The organizers of CandyFestival are adding a new variety this year: the Stompouce (stompouce ).

But how do you find a chocolate maker willing to collaborate on the development of the Stompouce—especially during the busiest chocolate-making months of the year? Dylan Reedijk, owner of Chocolaterie Reedijk in Strijen, quit his job as a pastry chef last year to fulfill his dream of opening his own chocolate shop. "I'm always up for new and original ideas, even if I have to work late at night. We came up with this version together with the guys from Candyfestival, and on my night off, I immediately got to work for them," says Dylan.
The Stompouce is a cross between a tompouce and a Sinterklaas chocolate letter and will be available exclusively via www.candyfestival.nl .
